Registered Dietitian, Certified Dietitian, & Clinical Exercise Specialist

As a combined Registered Dietitian and Clinical Exercise Specialist, April Davis RD, CD, ACSM CES is among an elite group of professionals in the United States and abroad to hold these dual credentials. Currently, April provides education and nutrition support to adult and pediatric patients with a wide range of medical conditions at St. Luke’s Rehabilitation Institute. She has had experience teaching higher education coursework as a Lecturer for the Nutrition & Exercise Physiology Program under the College of Pharmacy and is currently taking post-graduate classes at Washington State University while continuing to assist in the classroom. Volunteer work plays a vital role in April’s professional growth and she is presently serving on two Boards of Directors for the Local and State Dietetic Associations. As a consultant for People to People Ambassador Program, April enjoyed travelling to Italy and France last summer to observe a student delegation. Her favorite color is eggplant and she relishes in the partaking of cuisines from all different cultures!

Observation of Delegation Meals: II

Many students have enjoyed their favorite meals of the trip in a variety of settings. Some thought the cottage pie, carrots, peas, and cheesecake in London was the best, while others boasted about the rotisserie chicken with salad, coleslaw, and apple pie at Warwick Castle, with others yet giving the potato leek soup served with a variety of triangle sandwiches and Cadbury chocolate the top spot.
